A couple weekends ago, I went to a super fun “crafty pinterest party” hosted by The Clever Pink Pirate and Pink Cake Plate. We worked on pinterest inspired crafts and brought desserts inspired by pinterest. My kind of party! Search “dessert” on pinterest and you’ll find a plethora of 2 things: Funfetti and Cookie Sandwiches. So, funfetti cookie sandwiches it was. I came up with my own recipe and thankfully it turned out yummy. You can’t go wrong with bringing funfetti anything to a party!
Funfetti Cookie Sandwiches (makes 16 sandwiches)
Ingredients
18.25 oz Funfetti Cake Mix
1/3 cup Oil
2 Eggs
12oz Vanilla Frosting
Rainbow Sprinkles
Directions
Step 1: Preheat oven to 350 degrees.
Step 2: In a large bowl, mix together the cake mix, oil and eggs until smooth.
Step 3: Drop 1 tbsp of dough at a time onto a non-stick cookie sheet.
Step 4: Flour the bottom of a glass and flatten cookie dough or use your hands to flatten.
Step 5: Bake at 350 degrees for 5-7 minutes, until the bottom is light brown. Allow to cool.
Step 6: Frost the bottom of half the cookies. Place the remaining cookies on top of the frosted cookies to make a sandwich. Roll the edges in rainbow sprinkles. Enjoy!
