I whipped up a batch of gingerbread cupcakes for the gingerbread man party I recently hosted and they turned out soooo good! The little edible gingerbread man toppers are by Wilton and I found them at Walmart. Aren’t they darling?! I added my award winning (well, not any official awards) cinnamon cream cheese frosting to the cupcakes, but you could use any type of frosting. So yummy and just the right amount of ginger : cinnamon : nutmeg ratio (which isn’t always easy to accomplish).
INGREDIENTS (yields 12-15 cupcakes)
1 egg
1/2 cup milk
1/2 cup unsalted butter (room temperature)
1/2 cup brown sugar
1/2 cup molasses
1/2 teaspoon pure vanilla extract
1 1/3 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
pinch of salt
DIRECTIONS: Preheat the oven to 350 degrees. Mix the milk, butter, sugar, molasses and vanilla extract together. Mix the flour, baking soda, baking powder, cinnamon, ginger, nutmeg and salt together. Combine the wet and dry ingredients and mix until smooth. Bake at 350 degrees for approximately 20 minutes. Top with cinnamon cream cheese frosting once cooled.
