Monkey salad is my favorite breakfast recipe that doesn’t require much prep work or cooking. I call this my healthy cereal, minus the sugar and preservatives. If you’re doing Whole30 or following a gluten free or paleo diet, this is compliant. Just make sure the almond butter follows the rules. The cashews and almond butter make this salad filling enough that it’ll tide you over until lunchtime. You can switch out the blueberries for just about any berry and experiment with different nuts. Strawberries, raspberries and walnuts are also yummy! I’ve also left out the berries and added in coconut flakes instead, a delicious variation. Monkey salad is very versatile and the perfect on the go breakfast!
INGREDIENTS
1 sliced banana
1/4 cup blueberries
1/4 cup raw cashews
1 tablespoon almond butter
Sprinkle of cinnamon
Coconut flakes (optional)
INSTRUCTIONS: Slice the banana and add to a wide mouth mason jar or bowl. Add in cashews and blueberries, gently toss. Add almond butter to the top and sprinkle cinnamon. You can also add coconut flakes. Enjoy!

This breakfast salad has everything I love! Fruit, nuts, flavor and lots of texture! Seriously can’t wait to try it, Vanessa!
LOVED this!!! I’m doing Whole 30, and this was perfect!! I added in 2 TBS of coconut milk so it wouldn’t be as dry, and I used frozen blueberries – OMG! This was amazing. Thank you!
