When I was in undergrad, I had the opportunity to study abroad in Spain. It was one of the greatest experiences of my life to be able to be immersed in another culture. I lived with a host family in Ronda, a quaint Spanish town perched on a mountaintop. Morocco neighbors Spain and the Moroccan influences are very present in Spain, especially in the architecture of Ronda. That adventure was over a decade ago and I hope to make the trip back soon, maybe with the kids in tow this time. Until then, I can tell them stories about my time in Spain and craft up recipes that remind me of that amazing year. It’s funny how recipes can take you back in time. Here’s my Moroccan lemon mint tea spritzer recipe, with a side of nostalgia, enjoy!
