Calling all ice cream lovers! Blue Bunny® recently released their 2017 lineup of new ice cream flavors and we couldn’t wait to try a few. PB ‘N Cone™, vanilla ice cream with swirls of creamy peanut butter and crunchy chocolate dipped cone pieces, was our favorite! It has all the right flavor combos. To compliment our new favorite ice cream flavor, I whipped up a batch of peanut butter cookie cups. You can use your own homemade dough, but you know I’m all about kitchen shortcuts around here. I used pre-made peanut butter cookie dough, the kind that comes in ready to bake squares. Half a square is the perfect size for a miniature cookie cup. I pressed the dough into a miniature muffin tin, baked and added a scoop of ice cream to each cookie cup. The secret to these cookie cups is to use a generous amount of cooking spray on your muffin tin and to allow them to fully cool before you remove. Super easy and they look very impressive, when they take less than 30 minutes to create. Enjoy!

Step 2: Preheat oven to 350 degrees. Generously spray a miniature muffin tin with cooking spray. Cut each cookie square in half and press into a mini muffin tin spot, pressing the back of a spoon into each to create a cup.

Step 3: Bake for approximately 10 minutes or until golden brown. Allow to fully cool before removing cookie cups.

Step 4: Use a miniature ice cream scoop to place a scoop of ice cream in each cookie cup.

Step 5: Enjoy immediately or place in freezer to eat later.
