recipe: peanut butter protein balls

The one thing I struggle the most with in my weight loss journey is picking healthy snacks. I’m going to start making it a priority to plan ahead and have healthy snacks readily available, so I don’t turn to the bag of potato chips sitting in my pantry. I know you’ve seen versions of these protein balls around the internet. They are a great little snack that will keep you going until your next meal (next Nutrisystem meal in my case), exactly what I need! I decided to come up with my own recipe, using all of my favorite healthy ingredients. These peanut protein bars are soooo yummy and you really only need 1 to satisfy you. I can’t tell you how excited I am about this new discovery of mine! You could also throw in a few chocolate chips to the mix if you have a sweet tooth. I gave up caffeine, so no chocolate for this buff mama. Happy healthy snacking!

Ingredients (makes 12-15 balls)

1 cup quick cooking oats
1/2 cup flaxseed
1 cup peanut butter
1/3 cup honey
1 tsp vanilla
1 tsp cinnamon
1/2 cup coconut
1/2 cup pecan pieces

Directions

Combine all of the ingredients together. Chill in the refrigerator for 15 minutes. Roll into bite sized balls. Pop one in your mouth when you’re in need of a healthy pick-me-up snack!

    This looks soooo good. I am on a weight loss journey as well and snacks is where I fall short sometimes. I have a 5 and 6 six year old so you can imagine the goodies I’m tempted with. I’ll try this recipe. Who know maybe the kiddies will like it too!
