(20 crafty days of christmas) peppermint chocolate cake cookies

Chocolate cake and peppermint, what could be better than that? How about combining the 2 into a yummy cookie! Ohmygosh these are goooood! I need to go run around the block a few times just looking at the picture! I originally wrote this recipe for my friend Poofy Cheeks and her virtual cookie exchange party, but knew you’d love it too! Warning: You’ll be totally addicted to Andes Peppermint Crunch baking chips after you make these!

Ingredients (makes approximately 2 dozen depending on cookie size)

1 Box Chocolate Cake

2 Eggs

1/3 Cup Oil

2 Cups Andes Peppermint Crunch Baking Chips

Cookie Sheet

Parchment Paper

Instructions

Step 1: Preheat oven to 350 degrees. Beat eggs, oil and chocolate cake mix together. It will be very sticky, but that’s okay!

Step 2: Roll into 1 inch balls and place on a cookie sheet covered with parchment paper.

Step 3: Lightly flour the bottom of a glass and flatten cookies. Sprinkle cookies with Andes Peppermint Crunch Baking Chips.

Step 4: Bake for 8-10 minutes. Enjoy!
