(recipe) red velvet cupcakes & cream cheese frosting

Red. Velvet. Cupcakes. Cream. Cheese. Frosting. Need I say more? This cupcake recipe is swoon worthy and the perfect treat to make your Valentine this year. The cream cheese frosting will have you licking the spoon, it’s rich and creamy. You’ll only need a small dollop of frosting to satisfy your sweet tooth. There’s pretty much nothing healthy about this recipe, but calories don’t count on Valentine’s Day…right? Either way, these babies are soooo worth it!


Cupcake Ingredients (makes approximately 30 cupcakes)

½ cup butter
1 ½ cups sugar
2 eggs
1 cup milk
1 ounce red food coloring
1 teaspoon vanilla extract
1 ½ teaspoons baking soda
1 cup sour cream
2 cups flour
½ cup unsweetened cocoa powder
½ teaspoon salt

Icing Ingredients

1 (8 ounce) package cream cheese
¼ butter
1 tablespoon sour cream
2 teaspoons vanilla extract
16 ounces powdered sugar

 

Instructions

Step 1: Preheat oven to 350 degrees.
Step 2: To make the cupcakes, soften the butter and mix with sugar until smooth. Add in the other cupcake ingredients and mix until smooth. Bake for 20 minutes.
Step 3: To make the icing, soften the cream cheese and butter. Mix together with the other icing ingredients until smooth.
Step 4: Add a dollop of cream cheese icing to each cupcake before serving. Sprinkles optional.

  1. One of the things I really want to make is Red Velvet Cupcakes or cake. Yours looks great. Cream cheese frosting is a plus.
