(recipe) bacon, egg and spinach casserole

We’re starting the new year off in my house with some clean eating and trying to follow a mostly paleo and gluten free diet. The downside to healthy eating can sometimes be the prep time. Not the case with this super easy bacon, egg and spinach casserole that you could even make ahead of time and freeze. This recipe totally had me at bacon, but you could also substitute in ham or sausage (I vote for bacon). If you aren’t a spinach fan, you could try kale, broccoli or another favorite veggie. If you aren’t on a super strict paleo diet, you could even sprinkle in some shredded cheese. Make this yummy dish for breakfast or dinner. Who doesn’t love breakfast for dinner?! Super easy and healthy, my kind of cooking.

Ingredients

Coconut Oil Spray

8 Eggs

10 Bacon Pieces

8oz Frozen Spinach Bag

Coconut Oil Spray

Directions: Preheat oven to 375. Thaw spinach according to package and make bacon according to package. Crumble bacon into little pieces. Beat 8 eggs and add to an 8 x 8 baking dish lightly sprayed with coconut oil. Add in spinach and bacon. Bake for 20-25 minutes or until the center is completely cooked. Enjoy!
