(recipe) sausage, potato & peppers healthy skillet

It’s a rare thing in this house when a meal is a win for all 4 of us (including my anti-puree eating 11 month old, picky almost 4 year old and paleo loving husband). When it is, the recipe must be blogged about and shouted from the rooftops. Who knew that a 1 pot (YES, only 1 pot to clean!) red potato, chicken sausage and bell pepper recipe would be such a huge hit for my little family! For Logan, my almost 4 year old, I simply separate the sausage, potatoes and pepper onto a divided plate (because God forbid anything touches lol). For Amelia, my 11 month old with 2 teeth, I chop a few peppers in strips so she can easily hold onto them and gnaw on them. Do you think they’d notice if I made this daily? Ingredients:

3 Tablespoons Olive Oil

1 Yellow Pepper (diced in 1/2 inch squares)

1 Red Pepper (diced in 1/2 inch squares)

1 Orange Pepper (diced in 1/2 inch squares)

1 1/2 lbs Red Potatoes

14oz Chicken Sausage (sliced 1/2 inch thick)

Salt, Pepper, Garlic Powder

Instructions: Heat 2 tablespoon olive oil in a large skillet over medium/high heat. Cut the red potatoes into fourths and add to the skillet, seasoning to taste. Cover and reduce heat to low and cook for 20 minutes, shaking and mixing regularly. Set the potatoes aside on a plate and add 1 tablespoon olive oil to the skillet over medium heat. Add sausage and cook until browned, mixing regularly, but not fully cooked. Add peppers and season to taste. Cook, mixing regularly, until sausage is fully cooked and peppers are soft.

  1. Omg such a great recipe! I am in the same both, four peeps, two under the age of five and getting everyone to enjoy the same healthy meal is like spotting Elvis.

    I’ve made this three times now and made a couple of changes that my family has loved! I substitute coconut oil and add some diced pineapple to sweeten it up, throw in an onion to squeeze in one more veggie and swap turkey kielbasa to give it a little bit of spice. Btw, I am a HORRIBLE cook and originally followed your directions to the T and it came out perfectly! Thanks for sharing!

  2. I substitute a yam for the red potatoes and kielbasa for the chicken sausage. I also add chopped onion. It says season to taste. I add garlic sea salt, oregano, basil and onion powder. This is such an easy recipe and everyone loves it. This is a great way to get vegetables into the grandkids.
