Anyone else already planning out their Thanksgiving menu? Sweet potatoes are sort of my thing and I like to experiment with my recipe every year. Thankfully, sweet potatoes are pretty forgiving and hard to mess up in my experience. This year, I’m making glazed sweet potato fingerlings and I think I hit the recipe jackpot because these are soooo good! They are also super easy and require minimal prep, which is a requirement for my Thanksgiving sides. Just wait until you taste the amazing glaze – brown sugar, butter and cinnamon goodness! I might just have to make these again before Thanksgiving.
Ingredients
2lbs sweet potato fingerlings
olive oil
1 teaspoon cinnamon
1/3 cup brown sugar
1/2 cup butter
Instructions: Wash and lightly coat the sweet potato fingerlings in olive oil and bake at 375 for 20-30 minutes or until tender. In a saucepan, melt the butter and add in the sugar and cinnamon. Toss the sweet potatoes in this glaze while still warm. Allow to cool and enjoy!
