Recipe: Bunless Burger with Fried Carrots

Whole30 Bunless Burger with Fried Carrots

This is one of my favorite Whole30 meals, that’s also gluten free and sugar free and dairy free (lots of free’s). It’s a simple bunless burger, infused with onions and topped with fried carrots. It’s my go to meal on a busy day because it’s so easy to make and everyone in my family loves it. With the crunchy fried carrots, you won’t even miss the bun. Even when I’m not doing Whole30, this is my favorite way to eat a burger. I recommend serving with plantain chips, pico and guac. I’m putting this on the meal plan for next week!

Speaking of Whole30, we’re currently on round 5. Actually, we’re sorta stuck on round 5. My husband and I have successfully completed 4 Whole30’s since January with minimal breaks in between and a Whole60 thrown in there. Combined, we’re 100 pounds lighter and much more healthier. For some reason, round 5 has been the toughest for us. We’ve had to restart it more times than I care to admit and we just can’t seem to get through it. I’m recommitting myself right now and for the next 30 days, I plan on eating clean and sticking to The Rules. Wish me luck, but it hopefully won’t be too hard with yummy meals like this on the meal plan!

INGREDIENTS

2 lbs grass-fed beef
1 egg 
1/2 cup onions
Garlic Salt
Pepper
4 cups shredded carrots
1 tablespoon coconut or olive oil

INSTRUCTIONS: Preheat grill on high heat. Combine beaten egg, beef, diced onions, garlic salt (to taste) and pepper (to taste) in a large bowl and mix. Form the mixture into 8 hamburger patties and place on the grill until well done. As the burgers are grilling, fry the shredded carrots over medium heat with a tablespoon of coconut or olive oil. Top burgers with fried carrots and enjoy!
