Cinco de Mayo is around the corner and I thought I’d share one of my family’s favorite Mexican food recipes. These cheesy bubble up enchiladas are a spin off of traditional enchiladas, using a can of refrigerated biscuits to make them actually bubble up. You can make this dish using ground beef or turkey, both are delicious! You can also just stick to plain cheese, like my kids enjoy, by adding an extra cup of cheese to the meat mixture. INGREDIENTS
1 lb ground turkey or beef
1/3 cup white onions, chopped
15oz can enchilada sauce
16oz can refrigerated biscuits
1 1/2 cup cheese
Green onions for garnish, chopped
DIRECTIONS
Step 1: Preheat the oven to 350 degrees. Brown the beef/turkey with the onions.
Step 2: Add the enchilada sauce to the meat. Separate and cut the biscuits in fourths and add to the meat mixture.
Step 3: Add the meat and biscuits to a baking dish. Top with cheese.
Step 4: Bake at 350 degrees for 30 minutes or until the biscuits are fully cooked.
Step 5: Allow to cool and top with green onions. Enjoy!
