Picnics in the park rank right up there with Disneyland for my kids. There’s just something about spreading out a blanket in the grass and enjoying a meal together. This caprese pasta salad is one of our favorite picnic recipes. You can experiment with different types of pasta, but my kids love farfalle because it looks like little bow ties. You can also add grilled chicken to this recipe, but it’s really delicious and filling without. This is also a great recipe to take to potlucks or make ahead of time for parties. Don’t leave out the red onions or fresh basil, they add so much flavor!
INGREDIENTS
10.5 oz cherry or grape tomatoes container, halved
8 oz mozzarella balls container, halved
1 red onion, chopped
1 cup fresh basil leaves, unpacked
1 lb farfalle pasta, cooked
1/4 cup balsamic vinegar
1/2 cup olive oil
salt and pepper, to taste
DIRECTIONS
Step 1: Prep your ingredients. Cook the pasta according to the package.
Step 2: While the pasta is cooking, cut the mozzarella balls and tomatoes in half. Chop up the red onion and basil leaves.
Step 3: Combine the ingredients in a large bowl. Lightly toss in balsamic vinegar and olive oil. Add salt and pepper to taste. Enjoy!
