Happy Hispanic Heritage Month! We’re celebrating by making a recipe inspired by my grandma, baked chocolate s’mores empanadas. One of my cousins recently posted an old photo of my grandma’s kitchen table. I could practically smell my grandma’s tortillas cooking on the stove when I saw that photo. That table was the centerpiece of her home and there are so many memories tied to it. Spending time in the kitchen with my grandmother, helping her cook, was my favorite thing to do. My reward for helping was a cup of café con leche (coffee with milk), which for me meant a cup of milk with a splash of coffee and whatever treat she baked that day. We’d chat about everything and nothing. Even though I now live in a different state, my grandma still keeps my special coffee cup in her cupboard. Time was simpler, seemed to move slower and have less distractions at that kitchen table.
INGREDIENTS (makes a dozen)
1 pie crust sheet
2 inch circle cookie cutter
flour for dusting
mini marshmallows (3 per empanada)
NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels (6 per empanada)
1 egg (beaten)
turbinado sugar
INSTRUCTIONS
Step 1: Head to Walmart and purchase the ingredients. You may also want to stock up on HOT POCKETS® Brand Sandwiches, they are delicious dipped in guacamole or salsa! Oh and don’t forget the NESCAFÉ® CLÁSICO™ Instant Coffee and NESTLÉ® COFFEE-MATE® Liquid Coffee Creamer while you are there. You can’t have empanadas without coffee! These were staples in my grandmother’s pantry and they are now staples in mine. I love being able to get back to those simple moments anytime I sip my coffee!

Step 2: Preheat oven to 450 degrees. Defrost one pie sheet (shhh don’t tell my grandma that I’m using pre-made pie sheets), according to package. Roll out the pie sheet on a floured surface and use a 2 inch circle cookie cutter to cut. Combine leftover dough and roll out again for more circles.
Step 3: Add 3 marshmallows and 6 chocolate chips to each pie circle. Place on a baking sheet.
Step 4: Fold the circles in half and close by crimping the ends with a fork.
Step 5: Beat an egg and brush the tops with the egg wash. Sprinkle turbinado sugar on top.
Step 6: Bake at 450 degrees for 10 minutes or until the pie crust is golden brown.
Step 7: Enjoy while still warm with a cup of coffee and vanilla caramel creamer!
