Recipe: Cold Brew Coffee Cake Muffins

I can think of very few things better than a cup of cold brew coffee, but these coffee cake muffins come pretty close! I used the new Shamrock Farms Cold Brew Coffee and Milk in my muffin recipe and they turned out amazing. This new cold brew is smoother and less acidic than regular coffee and has double the caffeine of regular coffee. I so appreciate the convenient 12oz bottles, so I can quickly head out the door with one when I don’t have time to brew my own. It’s the perfect jolt of energy that this mama needs! Add in a coffee cake muffin with a crumble topping and it’s the best day ever!

MUFFIN INGREDIENTS (makes 16)

1 and 1/2 c all-purpose flour
1/2 c packed light brown sugar
2 tsp baking powder
2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
3/4 c Shamrock Farms Cold Brew Coffee and Milk
2 tsp vanilla extract
1/3 c vegetable oil
2 large eggs

CRUMB TOPPING INGREDIENTS

1/3 c sugar
1/3 c packed brown sugar
2 tsp cinnamon
1/4 tsp salt
1 c unsalted butter
1 1/2 c all-purpose flour

Step 1: Head to the coffee/juice refrigerated section and grab Shamrock Farms Cold Brew Coffee and Milk (100% Columbian coffee + Shamrock Farms milk). I used the original flavor, but it also comes in mocha and vanilla. You can use your flavor of choice. Mocha is delicious!

Step 2: Preheat the oven to 375 degrees and line or spray the muffin tin. Prepare the crumble topping. Combine the sugar, brown sugar, cinnamon, salt, butter and flour together with a pastry cutter until crumbly. Set asside.

Step 3: Prepare the muffins. Combine the dry ingredients (flour, sugar, baking powder, cinnamon, baking soda and salt). Mix in the wet ingredients (Shamrock Farms Cold Brew Coffee and Milk, vanilla, vegetable oil and eggs). Don’t overmix, you’ll want the batter to be a bit lumpy.

Step 4: Add muffin batter to the muffin tin, 3/4 full. Add 2 heaping tablespoons of crumble to the top of each muffin.

Step 5: Bake at 375 for 15-20 minutes or until the center is fully baked.
