Recipe: Chocolate Chip Coconut Cookies for Santa

This chocolate chip coconut cookie recipe is sponsored by As You Wish Pottery. All opinions are mine alone.

If you’re a fan of coconut + chocolate, these chocolate chip coconut cookies are for you! They almost taste like an almond joy candy bar, in cookie form. They are delicious and the perfect Christmas cookies for Santa! For those of you in the Arizona or Utah area, start a new holiday tradition and head into As You Wish to paint a cookie platter together for Santa. Santa will definitely appreciate the effort and the memories will last a lifetime. Santa might also like Peppermint Brownie Cookies or Nutter Butter Reindeer Cookies.

INGREDIENTS

1/2 cup butter
3/4 cup sugar
1 egg
1/2 teaspoon coconut extract
1 cup flour
1/2 teaspoon baking soda
1 cup chocolate chips
1/2 cup shredded coconut

DIRECTIONS

Head into As You Wish to paint a platter for Santa’s cookies!

Preheat the oven to 350 degrees. Add the butter and sugar to a hand or stand mixer and mix until creamed. Add the egg, coconut extract, flour and baking soda. Mix until smooth.

Fold in the chocolate chips and shredded coconut. Roll into 1 inch balls. Bake at 350 degrees for 10 minutes or until cookies are golden brown. Allow to cool before placing on a platter for Santa.
