After indulging on vacation, I’m getting back on track with healthy eating. To satisfy my sweet tooth, I created a healthier apple crisp recipe that’s perfect for breakfast or snack. This stovetop apple crisp recipe is easy to make and goes great with Shamrock Farms cottage cheese! Not only is cottage cheese high in protein (a single serving has 13 grams of protein), it’s also low in calories, fat and carbs. Plus, it just tastes good! INGREDIENTS (3 servings)
3 granny smith apples, diced
2 tbsp brown sugar
1 tbsp coconut oil
1 tsp cinnamon
1 tsp nutmeg
2 tbsp water
1/4 tsp vanilla
1 cup granola
sliced almonds
1/2 cup (per bowl) Shamrock Farms Cottage Cheese

DIRECTIONS
Step 1: Core and dice 3 granny smith apples and add to a medium sauce pan. Mix in brown sugar, coconut oil, cinnamon, nutmeg, water and vanilla over medium heat. Cover and mix occasionally for 10 minutes or until apples become soft.
Step 2: Remove from heat and mix in 1 cup of your favorite granola.
Step 3: Spoon half a cup of Shamrock Farms Cottage Cheese to a bowl. Add a cup of apple mixture to the bowl and top with almond slices.
