We received a crockpot, along with many other “must have” kitchen gizmos that looked awesome while I was holding the registry gun but I still haven’t learned how to use. I’ll admit that I had a bit of a crockpotphobia because it sat in it’s box, collecting dust for almost 4 years. I mean, I just didn’t understand how you could throw just about anything into a pot and it would be edible at the end of the day. I still don’t understand that but I no longer question it’s magical powers.
Now that I’m a believer, I searched my new favorite pastime (Pinterest) for crockpot recipes and found this Spinach Lasagna recipe. Lasagna in a crockpot?! I decided to give it a shot and I made it for dinner tonight, it was delish! Mr. Crafty Nest approved and so did Logan. I made a few minor changes to the recipe, like whole wheat noodles and I left out the parmesan (but only because I didn’t have any). I will definitely be making this again, thanks Pinterest! On the menu for this weekend are crockpot enchiladas (weight watcher style), I found the recipe on Pinterest of course.
