Operation “Bye Bye Baby Weight” has commenced. Lunchtime is the hardest for me because I’m usually rushing around the house after preschool pickup, trying to get everyone fed and into bed for naptime. Some days I skip lunch or pick a not so healthy option, just for the convenience factor. My lunches need to be quick and easy, something that I can just grab from the refrigerator and not have to cook. I recently started making jar salads for an easy lunch, but the lack of protein still left me hungry. Now, I throw in a few Tyson chicken nuggets into my jar and it keeps me satisfied until dinner time. My favorites from Tyson are their spicy chicken nuggets and cheesy chicken nuggets, they are delish and you never could have guessed that they came from Walmart! I pre-cook them the night before and prepare my jar so that it’s ready to go for the next day. A little bit of prep work the night before makes the next day run so much smoother for us!

Ingredients

Tyson Spicy Chicken Nuggets or Cheesy Chicken Nuggets

Lettuce Mix

Shredded Carrots

Sliced Almonds

Poppyseed Dressing (or dressing of choice)

Mason Jar (pint sized)

Directions: Cook 4 Tyson chicken nuggets according to package and chop into bite sized pieces. Place 1/2 cup of lettuce mix in the jar, pressing it down to the bottom with a spoon. Place 1/4 cup shredded carrots in the jar, layered on top of the lettuce. Place 2 tablespoons of sliced almonds in the jar, layered on top of the carrots. Place bite sized pieces of Tyson chicken nuggets in the jar, layered on top of the almonds. Fill up the remaining jar space with lettuce mix. Drizzle with poppyseed salad dressing or dressing of choice and enjoy!
