Skip the Starbucks drive thru today and make your own iced pumpkin latte at home. It’s super easy, way less money and dare I say that it might even taste better. I broke in my new Keurig 2.0 and oh how I love this beautiful machine! I just brewed a single cup for my pumpkin latte, but the 2.0 also has the ability to brew an entire carafe. I know my fellow hostesses, and sleep deprived mamas who may need an entire carafe to survive, are rejoicing with me! Think of all the pumpkin spiced lattes this baby can churn out! Speaking of, serve yours warm or over ice for a refreshing fall drink.
Ingredients
1/4 cup brewed black coffee
1 tablespoon pumpkin puree
1 cup coconut milk
1 tablespoons sugar
1/2 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
ice
Directions: Whisk coffee, pumpkin puree, coconut milk, sugar, vanilla extract, pumpkin pie spice and cinnamon together over low heat in a small saucepan. Simmer over the stove for 5 minutes, while continuously whisking. Pour over ice and enjoy!
