Grilled cheese is definitely not just for kids, especially this jalapeño popper grilled cheese recipe! If you like spicy, then you are going to love this! Every bite of this delicious sandwich tastes like a jalapeño popper, the perfect grown up grilled cheese. Made with cream cheese and colby jack, it also has a little crunch to it with crumbled tortilla chips. It’s modernized comfort food at its finest. You just have to try it, trust me! Trust. Me.
INGREDIENTS
2 jalapeño peppers
2 pieces of sour dough bread
1 tablespoon butter
3 tablespoons cream cheese
1 tablespoon crushed tortilla chips
2 slices colby jack cheese
DIRECTIONS
Step 1: Cut jalapeños in half and remove seeds. Place cut side down on a baking sheet and broil for 10 minutes. Remove the skins.
Step 2: Melt butter and brush onto 1 side of each piece of bread.
Step 3: Spread cream cheese on 1 piece of bread, the side that’s not buttered.
Step 4: Sprinkle crushed tortilla chips on the cream cheese. Place jalapeños on top of the chips.
Step 5: Place cheese on top of the jalapeños. Cover with the other piece of bread, buttered side out.
Step 6: Toast both sides on the stove over medium heat until golden brown.
Step 7: Enjoy!
