Schools out for summer, which means finding ways to cool down here in Arizona! One of those ways includes Blue Bunny® ice cream. Lots and lots of ice cream. I recently introduced my kids to my most favorite flavor ever: mint chocolate chip. It was a hit, although my son still prefers Blue Bunny® Vanilla (more mint chocolate chip for me!). To celebrate the start of summer, we made ice cream sandwiches together. I have a delicious sugar cookie recipe, that I share below, that works great for these cookie ice cream sandwiches! Stay cool and happy summer!
INGREDIENTS (makes 1 dozen sandwiches)
1 1/3 cups flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
3/4 cups white sugar
1/2 cup butter (softened)
1/2 egg
1/2 teaspoon vanilla extract
Blue Bunny® Mint Chocolate Chip ice cream
mini chocolate chips
Smucker’s Magic Shell Chocolate Flavored Topping
DIRECTIONS
Step 1: Head to Walmart to pick up Blue Bunny® Mint Chocolate Chip ice cream and the rest of your ingredients! The new clear packaging allows you to see the flavor swirls and I couldn’t resist buying Blue Bunny® Double Strawberry and Blue Bunny® Vanilla!
Step 2: Mix the flour, baking soda and baking powder together. Set aside. Cream the sugar and butter together, mix in the egg and vanilla. Add the wet ingredients to the dry ingredients and mix until smooth. Roll into teaspoon full balls and place on a baking sheet. You can sprinkle a little extra sugar on top if you’d like. Bake for 10 minutes at 375 degrees or until the bottoms are golden brown. Allow to cool.
Step 3: Turn 12 cookies upside down and place one full scoop of Blue Bunny® Mint Chocolate Chip ice cream on top of each cookie.
Step 4: Pour Smucker’s Magic Shell Chocolate Flavored Topping over the ice cream scoops and sandwich it in between another cookie. Smucker’s toppings are an inexpensive way to add some fun to your bowl of ice cream!
Step 5: Or instead of the Smucker’s Magic Shell Chocolate Flavored Topping, you can place the remaining cookies on top of the ice cream scoops and dip the sides in mini chocolate chips. Both ways are delicious!
