Lunch recipes need to be quick, easy and convenient around here. I’m a huge fan of mason jar meals, that I can make ahead of time and just grab out of the refrigerator. I recently discovered Herdez Instant Refried Beans and was a bit hesitant to try instant, 5 minutes beans. I’m pretty picky about my beans, but these passed the test and they’ll fit right in with my busy schedule! They tasted great in my latest mason jar recipe creation – Mexican taco jars! Keep reading to learn how to make these delicious jars.

INGREDIENTS (makes 1 jar)

1/3 cup Herdez Instant Refried Beans (traditional)

1/3 cup corn kernels

1/3 cup ground beef (cooked & seasoned with taco seasoning)

1/3 cup cheddar cheese (shredded)

1/4 cup lettuce (shredded)

1/4 cup tomatoes (chopped)

DIRECTIONS

Step 1: Brown the beef and add taco seasoning, set aside. Make the easy to prepare Herdez Instant Refried Beans using hot water on the stovetop, according to the package. The pinto beans will be ready in under 5 minutes and have a home-cooked, authentic taste! You can find this new product in these cities: San Diego, CA; Phoenix, AZ; Las Vegas, NV; Denver, CO; San Antonio, TX; Houston, TX and Des Moines, IA. Herdez Instant Refried Beans come in Traditional, Jalapeno, Chorizo and Queso flavors.

Step 2: Add 1/3 cup of refried beans to the bottom of a pint sized mason jar. You can use the rest of the Herdez Instant Refried Beans as a convenient side dish, they go great with everything!

Step 3: Top the beans with 1/3 cup corn kernels.

Step 4: Add 1/3 cup cooked ground beef on top of the corn. You can use a canning funnel to add your ingredients.

Step 5: Add 1/3 cup shredded cheddar cheese to the jar.

Step 6: Top the cheese with 1/4 cup shredded lettuce.

Step 7: Add 1/4 cup chopped tomatoes to the jar.

Step 8: Grab a fork and enjoy! You can add guacamole, hot sauce or salsa to your jar if you’d like!
