My husband and I are in the middle of our third Whole30 and our regular scrambled eggs for breakfast are getting a little boring. So, I’ve been doing some recipe experimentation and I created an egg casserole dish that was worthy sharing! The chunks of sweet potatoes make this recipe so good! Even if you aren’t doing Whole30 or you’re not on a Paleo diet, this breakfast recipe is the perfect way to start your morning. It’s healthy and filling!
INGREDIENTS
8 eggs
1 1/2 cup diced sweet potatoes
1/2 cup onions
1 cup chopped kale
coconut oil spray (or cooking spray)
garlic salt, pepper
INSTRUCTIONS
Step 1: Preheat oven to 350 degrees. Spray 8 x 8 inch baking dish with coconut oil spray.
Step 2: Beat eggs and place in an 8 x 8 inch baking dish.
Step 3: Add sweet potatoes, onions and kale evenly throughout the dish.
Step 4: Add garlic salt and pepper to taste.
Step 5: Bake uncovered for 40-45 minutes or until eggs are set.
