Disney Pixar’s original new film Inside Out hits theaters today (June 19th)! I had the opportunity to preview the first half of the movie at Disney Social Media Moms Celebration and I was also invited to attend an early screening (of the whole movie) last week. It had me laughing and crying in the same breath, it was soooo good. My almost 5 year old also loved it! I can’t wait to watch it again, Inside Out definitely ranks high up there in Disney movies for me. I’ll be back with a full review soon.
In the meantime, a few of my blogger friends and I got together for a virtual Inside Out themed dinner party. I brought the soup. Much to Disgust’s dismay (you’ll have to watch the movie to understand), it’s full of BROCCOLI. I think even she would like this one or an airplane spoon might help. The characters from the movie are all represented in our progressive dinner: Sadness, Scared, Anger, Joy and Disgust. Even if you don’t plan on seeing the movie (which you totally should!), this broccoli and cheese soup recipe is delicious!
INGREDIENTS
1/2 cup butter
1 cup chopped onion
2 garlic cloves, minced
3 cups chicken broth
1 (16 ounce) package frozen chopped broccoli
2 cups milk
1 tablespoon garlic powder
1/4 teaspoon black pepper
1 pound processed cheese, cubed
DIRECTIONS: Sautee onion in butter in a large sauce pan. Add chicken broth and broccoli, bring to a boil. Simmer until broccoli is tender. Add milk, garlic powder, pepper and cheese. Frequently stir until cheese is melted. Garnish with shredded cheese and broccoli (optional).
