On the 3rd day of Christmas…
What is better than chocolate and ritz crackers? Ritz crackers covered in chocolate! Kelsey, a crafty blogger after my own heart, shares her homemade recipe for thin mints. I was introduced to these little gems last Christmas. While we were enjoying time with my in-laws my husband’s Aunt opened up a batch of these homemade thin mints. The second she said ‘thin mint’ it was an instant love. I popped one in my mouth, and then two, three, well you get the picture. I just knew I had to have the recipe. Turns out it is as simple as they come! With only two ingredients and 5 minutes time you can have yourself 4 dozen homemade thin mint cookies!

Ingredients

Andes Crème de Menthe Baking Chips – found next to the chocolate chips
Ritz crackers

Directions Step 1: Pour the back of baking chips into a microwave bowl. Heat for 30 seconds and then remove and stir. Continue until your chips are completely melted.

Step 2: Stick your crackers into the melted chocolate one at a time. Remove with a fork to let the excess drip off.

Step 3: Lay them out onto wax paper until the chocolate sets.

Step 4: Once the chocolate has set gobble them up by the handfuls… or gift them!
