(tot school tuesday) kid-friendly banana ice cream recipe

Hi, I’m Emily from 52 Mantels and I’m so excited to be here today, sharing my kid-friendly recipe for Banana “Ice Cream”. This TWO ingredient treat is creamy, cold…and, totally wholesome. Just bananas and a dash of milk (regular, almond, coconut, soy…your call!).
The beauty of this recipe is that it can very easily be made dairy-free, vegan, organic, gluten-free, nut-free, soy-free and/or sugar-free. Did I miss any dietary restrictions?!
With just TWO ingredients (did I mention that already??), this is the perfect dessert to serve up to all the neighborhood kids! 🙂
How’s it made? I’m glad you asked!
It’s simple! When I have a bunch of bananas that are very ripe, I peel them and then break them into small chunks. I store these in a freezer ziplock bag…
To make the ice cream: grab the desired quantity of frozen banana chunks (I typically do the equivalent of one banana/person) and throw them in your HIGH-POWERED blender** or food processor. Add 1 T of milk (or milk substitute) per banana and blend until smooth and creamy! Serve immediately.
**I use my vita-mix and it works like a charm!

 

This is so yummy as-is, but here are a few additions you could try:
~mini dark chocolate chips (my daughter’s favorite!)
~peanut butter
~chopped nuts
~cocoa powder
~cinnamon (my favorite!)
~shredded coconut
~caramel sauce (my hubbies favorite!)

 

My daughter is a huge fan of this “ice cream”. And, I have no mommy-guilt when I let her indulge! 🙂
