(recipe) strawberry watermelon mint salad

This strawberry watermelon mint salad is the perfect way to say goodbye to summer. My husband and I are making a big effort to eat healthier. It was so easy to get off track with pregnancy cravings and in those early newborn days. I have baby weight to lose, so no more drive thru food for us! We’re researching a gluten free Paleo lifestyle, so I’m sure you’ll see a lot more recipes like this popping up on the blog in the future. You guys will love this refreshing recipe. Gotta get in all the watermelon and strawberries you can before they go out of season!

Ingredients

1/2 personal seedless watermelon

1 carton strawberries

1 package mint leaves

1 lemon

Instructions

Clean and cut up the strawberries into bite sized pieces. Cut 1/2 the personal seedless watermelon into bite sized pieces. Chop up the mint. Toss strawberries, watermelon and mint in lemon juice from 1 lemon. Enjoy!
