One of my favorite things about spring, aside from the beautiful weather here in Arizona, is the abundance of fruit at the grocery store. In my attempt to eat healthier, but still satisfy my sweet tooth, I whipped up a batch of spring inspired fruit salsa. I even used a lemon for the recipe from a friend’s tree. Can’t get any more springier (is that a word? totally should be) than that! You guys are going to just have to make this and see for yourself how AH-MAZING it is! Seriously, just give me a spoon because it’s that yum! For those of you who want to get a little creative and even more springier (see, totally a word), impress your friends (or in my case, my 3 year old son who is totally into bugs and other flying things) by making homemade cinnamon sugar tortilla chips – 3D butterfly shaped! Enjoy!
Fruit Salsa Ingredients (yields aprox 1 cup):
2 Granny Smith Apples
10 Raspberries
3 Large Strawberries
1/2 Lemon
2 Tablespoons Strawberry Preserve
Directions: Chop and combine granny smith apples, raspberries and strawberries. Squeeze 1/2 lemon over the fruit and toss. Mix in strawberry preserves and serve immediately. You can serve with homemade cinnamon sugar chips or use as an ice cream topper.
3D Cinnamon Sugar Butterfly Chips Ingredients (yields aprox 20 chips):
5 Tortillas
2 Tablespoons Melted Butter
Cinnamon Sugar
(you’ll also need a brush, foil and butterfly cookie cutter)
Directions: Preheat oven to 350 degrees. Use cookie cutter to cut tortilla into butterfly shapes. Melt butter and brush tortilla chips with it (front and back). Sprinkle the top of the tortilla chips with cinnamon sugar. Fold a large piece of foil into a triangular shape and place on your baking sheet. Drape the tortilla chips over the foil as shown in the photo below. Bake for 10 minutes or until crispy.

Oh I love the idea of fruit salsa on ice cream! And the butterfly’s are awesome!
I never would have thought to make those cute little butterfly chips! I could eat all of those in one sitting – dangerous!
You are so genius with those butterfly chips! And that salsa is beautiful. I think this would be so perfect for a Mother’s Day brunch.
