(recipe) kid-friendly green juice

In an effort to get my 4 year old (and our entire family) to eat more fruits and veggies, we’ve started juicing.  After many (many, many, many) failed experiments, we’ve perfected our green juice recipe, or as Logan likes to refer to it, the green “HULK SMASH” drink. It’s not too sweet and not too leafy. My little guy loves measuring and pouring in the ingredients into our Blendtec. With Logan returning to school next week, it’ll be the perfect after school snack for a healthy pick me up. Before you write this recipe off as something your kid would never try in a million years, give it a shot. You might be pleasantly surprised, especially if they can help make it.

Ingredients: (yields 4 large servings)

1 Cup Spinach

1 Cup Kale

2 Cups Cold Water

1 Cup Frozen or Fresh Pineapple

1 Cup Frozen or Fresh Mango

1 Banana

Directions: Place 1 cup kale, 1 cup spinach and 2 cups water into your Blendtec (or other high powered blender). Pulse 5 times for a few seconds until the greens are liquefied. Place 1 cup pineapple, 1 cup mango and 1 banana (peeled) into the blender and cover. On the Blendtec, press “Whole Juice” and allow to blend until finished on that setting. If you are using another high powered blender, you’ll want to pick a high speed blending option that will turn your ingredients into a smooth, liquid juice. Pour in a mason jar, add a bendy straw and enjoy!
