If you haven’t jumped on the chia seed bandwagon yet, head to your local grocery store or health food store and buy a bag! These tiny seeds may look like nothing, but they have so many nutritional benefits! They are a great way to start your morning and I personally love adding them to my yogurt. I’m sharing one of my favorite chia seed recipes, just in time for Mother’s Day brunch. You can add any type of berries that you like. I personally love strawberries, blueberries and raspberries. Blackberries are delicious in this recipe too! Make a big batch and you can serve in shooters as mini appetizers. Try it, you’ll love it!
INGREDIENTS (serves 2)
1 cup plain greek yogurt
1 teaspoon honey
1 teaspoon maple syrup
1/4 cup chia seeds
Berries (strawberries, raspberries & blueberries)
Coconut Flakes
DIRECTIONS
Mix 1 cup of plain greek yogurt, 1 teaspoon honey and 1 teaspoon maple syrup together in a mixing bowl. Add 1/4 cup chia seeds to the yogurt and combine.
Divide the yogurt mixture into 2 half pint mason jars. Fill the jar to the top with mixed berries and sprinkle with coconut flakes. Serve cold and enjoy!
