Mother's Day Breakfast In Bed Ideas

Mother’s Day is right around the corner and I’m making crepes with homemade strawberry syrup for my mom, breakfast in bed style. My most favorite crepe recipe actually comes from World Market and don’t tell anyone but it’s actually a ready made mix. Just toss in a few more ingredients and you have the perfect golden crepes, ready to be smothered in chocolate and strawberries. I’m usually all about easy, but skip the store bought syrup and make your own. Trust me, this syrup is amazing and worth the effort! STRAWBERRY SYRUP INGREDIENTS

2 1/2 cups diced strawberries
1/2 cup organic coconut palm sugar
1 tablespoon lemon juice
1/2 tablespoon vanilla extract

CREPES INGREDIENTS

Crepe mix + ingredients for crepes
Bosco chocolate syrup
Dark chocolate curls & strawberries for garnish

INSTRUCTIONS

Step 1: Dice strawberries and add them to a medium sauce pan. Add coconut palm sugar, lemon juice and vanilla to the pan. Bring to a boil and then simmer for 20-30 minutes, while occasionally stirring. Remove from heat and let cool.

Step 2: While the strawberry syrup is simmering, you can start on the crepes. Make them according to the package, taking care not to overcook them. Fold the crepes into triangles and place 3-4 on a plate. Drizzle chocolate syrup (Bosco is my fave) and add chocolate shavings next to strawberries for garnish.

Step 3: Once cooled, the syrup will thicken. Drizzle syrup over crepes. You can store it inside of a wide mouthed mason jar, which makes it easy to use.

Step 4: Serve with coffee or tea in a personalized photo mug from Shutterfly and Orange Passion Mango Soda.

Step 5: If you are planning breakfast in bed for mom, don’t forget the serving tray. My cup, plate, napkin and silverware also all came from World Market.
