Recipe: Pumpkin Yogurt Parfait

Break out the chunky scarves and eat everything pumpkin, Fall is finally here! It’s my favorite time of year, probably because us Arizonians can finally see the light at the end of the 110+ degree weather tunnel! I especially love Fall recipes, did I mention pumpkin everything?! Today I’m showing you how to make our new favorite after school snack, a pumpkin yogurt parfait. It’s easy to make and so yummy! My kids can usually share a jar between the both of them and mama gets to eat their leftovers. I like making 2 jars when I make this recipe, so I can store 1 away in the fridge for the next day. This recipe is also great for a quick and easy, on the go breakfast! 

INGREDIENTS (makes 2 pint sized jars)

Pumpkin Puree 15oz Can
2 Yoplait Greek 100 Vanilla Yogurt
4 Nature Valley Crunchy Oats N Honey Granola Bar
3 Teaspoons Pumpkin Pie Spice
2 Teaspoons Cinnamon
3 Tablespoons Maple Syrup

DIRECTIONS

Step 1: Head to Safeway and purchase your ingredients. I found the yogurt in the refrigerated section and the granola bars in the breakfast aisle. Safeway is having a Stock Up Sale on General Mills products from 9/30 – 10/13! I’ll be stocking up!

Step 2: Mix the pumpkin puree, pumpkin pie spice, cinnamon, sugar and syrup together.

Step 3: Place 1/2 cup of pumpkin puree mixture into the bottom of a pint sized mason jar.

Step 4: Layer half of the container of yogurt into the jar, topped with 1 crushed Crunchy Oats N Honey Granola Bar.

Step 5: Continue layering pumpkin mixture, yogurt and a second crushed Nature Valley Crunchy Oats N Honey Granola Bar all the way to the top of the jar.

Step 6: Add a couple spoons and enjoy this Fall favorite recipe!
