I have been wanting to make miniature pecan pies ever since I spotted the 6 inch cast iron skillets at World Market! Not only do things taste better when cooked or baked in a skillet, it just looks so darn cute! Plus, you don’t have to dirty any dishes, just dig right on in as soon as the skillet has cooled! This recipe is a great way to impress your holiday dinner party guests, they’ll love their individual sized pies! Oh and you need to track down the pie crust mix that I mentioned below at World Market. Stock up around the holidays, it’s the best! I may or may not have 5 cans of it in my pantry.
INGREDIENTS
1 tablespoon powdered sugar
4 large eggs
1 1/2 cups brown sugar
1/2 cup butter, softened
1 teaspoon World Market vanilla
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons milk
1 cup chopped pecans
40 pecan halves
You’ll also need:
World Market kitchen towels (optional)
World Market measuring spoons (optional)
DIRECTIONS
Step 1: Make the pie crust according to the container. Roll out the dough and cut 4 – 7 1/2” circles. Lay the circles into the skillets, smoothing out around the sides.
Step 2: Crack the eggs into a large mixing bowl, add the brown sugar and whisk until fluffy.
Step 3: Add the butter, vanilla, sugar, flour and milk. Whisk until smooth.
Step 4: Whisk in the chopped pecans.
Step 5: Ladle the pecan mixture into the skillets, dividing between the 3 skillets. Place 8-10 pecan halves on the top of each skillet.
Step 6: Bake at 325 degrees for 30 – 45 minutes or until middle is fully cooked. I leave mine in until the top is a little crispy, it’s so yummy that way!
Step 7: Allow to cool and dig in!
