Thanksgiving just isn’t Thanksgiving without the pumpkin pie! I’m going miniature this year, because who can resist a bite sized pumpkin pie?! Not only are these mini pumpkin pies adorable, they are also delicious. Make them in a muffin tin with a scalloped cookie cutter for a fun crust design and don’t forget the whipped cream. Paint a Thanksgiving platter to display them on at As You Wish, this would be a great family activity to do together! While you are in the mood for holiday crafting, you can whip up some mason jar lid ornaments or a winter fur wreath.

INGREDIENTS (makes 12)

1 package refrigerated pie crusts (2 sheets)
1 can (15 ounces) pumpkin
1 can (14 ounces) sweetened condensed milk
2 eggs
1 tablespoon pumpkin pie spice
1 teaspoon vanilla extract

You’ll also need: flour for dusting, 2 inch scalloped cookie cutter, muffin tin, whipped cream
