I qualify myself as an expert when it comes to having anything to do with cupcakes and this, my friends, is one amazing cupcake! What will you do with the other Tim Tam packages? As I mentioned before, Australia is home of the Tim Tam. Having played tennis when I was younger, I can’t help but get excited to watch The Australian Open later this month. I’ve thought about getting back into tennis and introducing my children to the sport, this might just be the perfect jumpstart. It’s such a great workout and a lot of fun to watch, definitely tune in if you get the chance! Make a batch of Tim Tam cupcakes, grab a few party supplies and snacks at Cost Plus World Market for an at home viewing party.
CHOCOLATE CUPCAKE INGREDIENTS
1 cup flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
3/4 cup sugar
pinch of salt
1/4 cup vegetable oil
1 teaspoon vanilla extract
2/3 cup buttermilk
1 egg
6 Tim Tams (cut in half)
GANACHE FROSTING INGREDIENTS
11.5 ounces milk chocolate chips
1 cup heavy cream
GARNISH INGREDIENTS
6 Tim Tams (cut in half)
12 green gum balls
DIRECTIONS
Step 1: Preheat oven to 350 degrees. Whisk together the dry ingredients (flour, cocoa powder, baking soda, sugar and salt). In a separate mixing bowl, combine the wet ingredients (vegetable oil, vanilla extract, buttermilk and egg). Mix together the wet ingredients with the dry ingredients until smooth.
Step 2: Place cupcake liners inside the muffin tin and fill the liners halfway. Place half a Tim Tam in each liner.
Step 3: Bake at 350 degrees for 15-20 minutes (depending on your oven). Don’t forget to set a cute kitchen timer from Cost Plus World Market! Allow to completely cool.
Step 4: As the cupcakes are cooling, prepare the chocolate ganache frosting. Over medium-high heat, bring the chocolate chips and heavy cream to a slight boil. Constantly stir and remove from heat immediately once it reaches a boil. Place in the refrigerator for an hour to chill. Once chilled and thickened, mix with a hand mixer or stand for 2 minutes on high. Place in a piping bag with a large star tip and frost the cupcakes.
Step 5: Add half of a Tim Tam to each cupcake and top with a green gum ball, to look like a tennis ball. Enjoy!
