Happy day 4 of 10 Crafty Days of Halloween! I found this awesome 2 ingredient pumpkin muffin recipe on, where else, pinterest. I actually spotted it first last year on spark people and have been wanting to try it out. You really only need 2 ingredients – no milk, no eggs, no oil. Just cake mix and canned pumpkin, that’s it and they are totally yummy! Who needs to bake things from scratch? Not the mother of a toddler who just dropped his morning nap, which means mommy now has even less “me” (aka cleaning, cooking, laundry) time. Feel free to link up your own Halloween crafts HERE.

Step 1: Mix the cake mix and pumpkin together. Spoon the combination into cupcake liners. Want to be let in on a little secret on how to make your muffins all the same size? Use a scooper. I have the large scooper from Pampered Chef that is just the right size for cupcakes and muffins.

Step 2: Follow the directions on the cake mix box for baking instructions. Pull them out of the oven, sprinkle a little powdered sugar on them and enjoy. That’s literally it.
