Pancakes were the big weekend treat in my house growing up. My mom would make me a special V shaped pancake, V for Vanessa. My mom does the same for her grandchildren when they sleep over at her house. L for Logan and A for Amelia. They look forward to waking up to the scent of pancakes and crunchy bacon in the morning. I love when special traditions like that carry on to the next generation. I’ve been known to whip up my own batch of pancakes from time to time and buttermilk pecan pancakes are at the top of my list! Here’s one of my favorite pancake recipes, so you can start your own pancake tradition.
INGREDIENTS
1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon light brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon vanilla
1 egg
1 cup buttermilk
2 tablespoons vegetable oil
1/2 cup chopped pecans
whole pecans for garnish
DIRECTIONS
Step 1: Whisk flour, sugar, brown sugar, baking powder, baking soda and salt together in a large bowl.
Step 2: Whisk vanilla, egg, buttermilk and vegetable oil together. Combine with dry ingredients.
Step 3: Fold in chopped pecans.
Step 4: Heat a griddle or non-stick skillet on low heat. Pour 1/4 cup of batter onto the skillet for each pancake and flip when the batter starts bubbling. Cook on the other side until golden brown.
Step 5: Top with whole pecans and syrup. Enjoy!
