My family is headed to Disney World today for the Disney Social Media Moms Celebration and we couldn’t be more excited! One of my all time favorite Disney World restaurants for breakfast is the Cape May Cafe at Disney’s Beach Club Resort, where we’ll be staying! This will be our first time staying there, but the resort from the outside is beautiful and I can’t wait to explore the Boardwalk area. The Cape May Cafe is a character buffet with a beachside setting and the characters are all dressed in beachwear. You might even encounter a Donald Duck sighting, a rarity compared to some of the other popular characters in Disney World. Oh and you can’t beat being able to walk right to Epcot from Cape May Cafe! Aside from the location, the food is fabulous, especially the Cape May Cafe breakfast pizza! I created a copycat recipe, so we could still enjoy some Disney magic at home when we return (can’t we just stay here forever?). Here’s my take on the Cape May Cafe breakfast pizza, enjoy! INGREDIENTS
Pizza crust
1/2 cup green salsa (mild for kids)
8 large eggs
1 cup shredded mozzarella & cheddar cheese
Salt & pepper to taste
DIRECTIONS: Preheat oven to 350 degrees. Scramble the 8 large eggs and set aside. Spread 1/2 cup green salsa on top of the pizza crust and spread out the scrambled eggs on top. Sprinkle 1 cup of shredded mozzarella and cheddar cheese mix on top of the eggs. Bake at 350 degrees for 10-15 minutes.
