After indulging over the holidays, I’m looking forward to getting back to healthy cooking. Lunch, when I don’t have a whole lot of time to whip up a meal, seems to be my downfall. To combat the lunchtime munchies, I’m trying to meal prep ahead of time. This tuna stuffed avocado recipe is great for lunch or even a quick dinner. You can prep the tuna portion ahead of time and just spoon it onto the avocado once you are ready to eat. If you like spicy, don’t forget to add that jalapeño! This recipe is gluten free, paleo and whole30 approved…also very tasty!
INGREDIENTS (makes 12)
6 large avocados (cut in half)
1 large tomato (chopped)
1/2 red onion (chopped)
1 jalapeño (chopped)
3 cans tuna
1 lime (juiced)
1 teaspoon garlic salt (or to taste)
DIRECTIONS
Step 1: Chop the tomato, red onion and jalapeño. Mix together in a large mixing bowl.
Step 2: Drain tuna and mix into the tomato, onion and jalapeños. Mix in the juice from 1 lime.
Step 3: Cut the avocados in half and spoon the tuna mixture on top of the avocados. Serve immediately, enjoy with a spoon!
