It’s back to school time, when children come home absolutely famished and they start raiding the pantry. Or when parents get to be taxi drivers, rushing from the pick up line to extracurricular activities. I’m all about easy and convenient recipes (that are still healthy) this time of year! My kids have been loving this waldorf salad recipe made with Shamrock Farms cottage cheese! I prep a big batch on Sunday night and they enjoy it for breakfast or for a protein packed after school snack before we rush off to dance and swim practice. It’s gluten free and primal friendly for those of our Whole30 or Paleo friends who also enjoy dairy like we do.

COTTAGE CHEESE WALDORF SALAD INGREDIENTS

The ingredients for this cottage cheese waldorf salad are easily found in the grocery store and I bet you already have many of them in your pantry.

  • 16 ounces Shamrock Farms cottage cheese
  • 1 cup red grapes (halved)
  • 1/2 cup golden raisins
  • 1 cup walnuts (chopped)
  • 2 large granny smith apples (chopped)
  • 1 teaspoon lemon juice

  1. First, cut the grapes in half. Chop and core the apples. Chop the walnuts.
  2. Mix the grapes, apples, walnuts and raisins together in a large mixing bowl.
  3. Mix in the cottage cheese.
  4. Cover and chill in refrigerator for at least an hour.
  5. Enjoy cold!
